Celebrate the Year of the Monkey with Chinese Chicken Lettuce Cups... a variation on everyone's favorite dish from PF Chang's.
Chinese Chicken Lettuce Cups
3 Tbsp soy sauce
3 Tbsp honey
2 Tbsp olive oil
1 ½ lbs boneless skinless chicken breasts, cut into ½ inch pieces
2 cloves garlic, minced
1 Tbsp garlic, grated
Red pepper flakes to taste, optional
1 bunch scallions, sliced
¼ cup roasted cashews, almonds, or peanuts
1 head Bibb lettuce
¼ cup chopped cilantro
- Mix the honey and soy sauce together in a small bowl.
- Heat the oil in a skillet. Season chicken with salt and pepper, and cook until it begins to brown.
- Stir in the garlic, ginger, red pepper flakes, and scallions. Stir in the honey-soy sauce mixture and continue to cook until chicken is cooked through.
- Toss chicken with nuts, and spoon into lettuce cups. Sprinkle with cilantro.
