Strawberries for dinner? Below we share a fool-proof way to get your kids more interested in their salad -- spinach is combined with juicy, sweet berries and a creamy poppy seed dressing for a healthy and delicious dinnertime treat.
Strawberry-Spinach Salad
Ingredients:
10 oz. fresh spinach
1/2 lb. strawberries
1/2 c. Greek Yogurt
1/4 c. olive oil
1 Tbsp apple cider vinegar
2 Tbsp white sugar
2 tsp poppy seeds
Salt and pepper, to taste
Steps for Rad-Kids:
1. Add spinach to large salad bowl. Hull and slice strawberries; add to spinach.
2. Mix yogurt, olive oil, vinegar, sugar and poppy seeds together in a small bowl. Salt and pepper to taste.
3. Drizzle spinach and strawberries with creamy poppy seed dressing. Toss to lightly coat. TASTE & SHARE!
