  1. 1. Slice onion half into strips. Cut strips into a small dice. Set aside in a prep bowl.

  2. 2. Cut large butternut squash chunks into small 1-inch cubes. Set aside in a prep bowl.

  3. 3. Cut chicken into cubes using knife or kitchen shears.

  4. 4. Wash your hands thoroughly after working with raw meat.

  5. 5. Heat oil in pot over high heat. Add chicken in an even layer. Do not stir.

  6. 6. Sear chicken pieces, without stirring, until browned on one side (~5 minutes).

  7. 7. Reduce heat to medium. Stir in onion pieces. Cook until softened (~2 minutes).

  8. 8. Sprinkle in flour, cumin, salt, and pepper. Stir to coat chicken and onions.

  9. 9. Pour in diced tomatoes and broth. Stir, scraping any browned bits off bottom of pot.

  10. 10. Add squash cubes. Cover pot and cook until squash is tender (~20 minutes).

  11. 11. Rinse and strain black beans. Stir beans and corn into stew. Simmer until warmed (~5 mins).

  12. 12. Mince or scissor chop parsley. Stir into stew. Season with salt and pepper. TASTE & SHARE!
