Use leftover rice in a sweet and creamy summer dessert! Serve it with juicy, ripe mango, stone fruit, or berries.
Mango Rice Pudding
Ingredients:
2 cups leftover rice
1 can coconut milk
1/2 cup sugar
1/2 tsp salt
1 ripe mango
toasted sesame seeds
Steps for Rad-Kids:
1. Combine rice, coconut milk, sugar, and salt in a medium sauce pan.
2. Bring mixture to a boil, then reduce heat and simmer for 20 minutes until thick.
3. Meanwhile, cut mango. Peel mango. Cut large pieces away from core. Dice mango into small pieces.
4. Cool rice pudding until room temperature. Serve rice, layered with mango and sprinkled with sesame seeds. TASTE & SHARE!
