Halloween is almost here. Practice carving - use a pepper! Stay tuned for more spooktacular dinners - we will be posting a new recipe each day this week!
4 large orange bell peppers
- 1 lb lean ground beef
- 1/2 onion
- 1 cup cooked rice
- 1 teaspoon salt
- 1 tsp granulated garlic
- 1 28 can tomato sauce
- Carve top of pepper (as you would a pumpkin). Take top off and scoop away seeds. Carve a fun face into each pepper!
- Dice onion and saute with beef in a large pan until brown, 5-10 minutes. Stir in rice, 1 cup tomato sauce and seasonings (you can also add other chopped vegetables, cheese or herbs to this mix - we added wilted kale and parmesan!).
- Stuff each pepper with meat mixture. Set peppers in baking dish and pour remaining tomato sauce around the peppers.
- Cover baking dish with foil and bake in preheated oven for 20 minutes. TASTE & SHARE!
