Brazilian Cheese Bread (Pão de Queijo)

Ingredient Spotlight: This month's Brazilian Cheese Bread calls for tapioca flour or tapioca starch. This special flour gives the cheese bread an authentic taste and texture (it is also gluten-free!).You can find tapioca flour at select grocers such as Whole Foods Market, Asian markets, and online retailers. For quick delivery, try Bob's Red Mill Tapioca Flour on Amazon.

Substitutions

Dairy Allergy

Brigadeiro Chocolate Bonbons >> Instead of using sweetened condensed milk, use the cream at the top of two cans of coconut milk. (Chill the cans before using and scrape just the cream from the top of each can, not the liquid part. Do not shake the can before opening.)

Place the coconut cream into a bowl with the rest of the ingredients outlined in the recipe, along with 2 tablespoons of coconut sugar (or regular sugar).  Do not heat. Stir until combined and refrigerate for 15 minutes. Complete recipe as directed. 

Brazilian Cheese Bread >> Use a non-dairy milk such as almond, rice, coconut, or soy. Use a dairy-free cheese such as Follow Your Heart’s grated Parmesan cheese.

Vegetarian

Gaucho Steak Skewers >> Instead of steak, used cubed tofu, tempeh, or seitan.

Vegan
