Mardi Gras, French for "Fat Tuesday", is an annual Carnival celebration in New Orleans. There are 3 colors that represent Mardi Gras; each standing for a particular personal trait or cultural value. Purple symbolizes justice, gold symbolizes power, and green symbolizes faith. Enjoy this festive dish with your family tonight!
2 cans black beans
1 cup pineapple, diced
1/2 cup red onion, diced
1 bunch cilantro, mined
1 clove garlic, minced
1 lime, juiced
salt and pepper to taste
1. Drain and rinse black beans in strainer then add to medium bowl.
2. Dice pineapple, red onion, cilantro, and garlic then add to bowl.
3. Cut lime into quarters and squeeze over ingredients in bowl.
4. Add salt and pepper to taste.

This recipe is especially delicious served over chicken or fish. Serve it with a side of tortilla chips for a tasty afternoon snack, too!
Tips for cooking with Rad-Kids:
Kids can help rinse, dice, juice, and season!
When cutting an onion, place it in the freezer for 15 minutes prior to cutting. The cold air releases its tear-causing enzyme into the air at a slower rate than a room temperature onion. Once chilled, peel the onion into layers making it easier for your Rad-Kids to dice.
Craft scissors work great when cutting herbs (such as cilantro) and onions.
