Rad-Kids Cook for Cinco de Mayo!

Posted on May 05, 2014

Happy Cinco de Mayo from Raddish!  Celebrating a holiday with food is a great way to teach your children about culture and cuisine.

What are some of your family's favorite Mexican dishes?  What is your family's favorite cuisine?

This week we've created a tasty taco snack that can be served all year long! Below we share a new way to prepare a crunchy treat with nutritious veggies.

Green Pea Crunchy Tacos

Ingredients:

1 red bell pepper

2 avocados

Juice from 1/2 lime

1/2 small bunch of green onion

Small handful fresh cilantro

1/2 bag of defrosted frozen peas

8 hard taco shells

Shredded cheddar cheese

Salt & pepper

Steps for Rad-Kids:

1.  Slice bell pepper with either scissors or plastic knives into thin strips.

2.  Smash avocados and add lime juice to prevent browning.  Salt and pepper to taste.

3.  Chop green onions and cilantro with scissors.

4.  Assemble taco by spreading avocado on the shell, and filling it with peas, peppers, herbs, and cheese. TASTE & SHARE!
