Rad-Kids Cook with Spinach!

This week Raddish is chopping up spinach!  We love this leafy green in fresh spring salads and hearty vegetable skillets.

How does your family cook and eat spinach?  What can you create with spinach this week?

Strawberries for dinner?  Below we share a fool-proof way to get your kids more interested in their salad -- spinach is combined with juicy, sweet berries and a creamy poppy seed dressing for a healthy and delicious dinnertime treat.

Strawberry-Spinach Salad

Ingredients:

10 oz. fresh spinach

1/2 lb. strawberries

1/2 c. Greek Yogurt

1/4 c. olive oil

1 Tbsp apple cider vinegar

2 Tbsp white sugar

2 tsp poppy seeds

Salt and pepper, to taste

Steps for Rad-Kids:

1.  Add spinach to large salad bowl.  Hull and slice strawberries; add to spinach.

2.  Mix yogurt, olive oil, vinegar, sugar and poppy seeds together in a small bowl.  Salt and pepper to taste.

3.  Drizzle spinach and strawberries with creamy poppy seed dressing. Toss to lightly coat.  TASTE & SHARE!
